Mexican tortilla beef pizza with fresh tomato & chilli


FOR THE PIZZA SAUCE
1 x 400g tin chopped tomatoes
1 heaped tbsp chipotle sauce
1/2 tsp mild cayenne pepper
1/2 tsp dried oregano
1 tsp onion powder
1 tsp garlic powder
juice and zest 1 large lime

FOR THE BEEF
olive oil for cooking
500g mince/ground beef
1/2 tsp smoked paprika
1 tsp ground cumin
1 tsp garlic powder

YOU WILL ALSO NEED
1 cup sour cream
juice 1 lime
handful fresh coriander, finely chopped
2 large flour tortillas
2 x 125g balls mozzarella
1/2 cup roasted red pepper strips
2 long mild green chillies, de-seeded
2 large truss tomatoes, diced
fresh coriander, for garnish
maldon sea salt flakes
freshly ground black pepper


Preheat oven to 180°c/180°f.

To make the pizza sauce add tomatoes, chipotle sauce, cayenne, oregano, onion powder, garlic powder, lime zest and juice to a mixing bowl and combine. Season to taste with a little salt and freshly ground black pepper.

Set aside.

In a bowl combine sour cream, lime juice and finely chopped coriander. Season with a little salt and freshly ground black pepper. Set aside.

Heat 1 tbsp olive oil in a large frying pan set over medium-high heat. Add beef and cook whilst breaking up with a spatula. Add paprika, ground cumin and garlic powder. Combine well and cook, stirring until meat has browned.

To assemble pizzas place tortillas in the oven and toast for 1-2 mins, you only want them to lightly toast so take care to not cook them too much at this stage.

Remove and divide pizza sauce on top, followed by torn mozzarella and red pepper strips, arranging evenly.

Spoon beef on top, spreading out then bake in oven for 8-10 mins or until tortillas are crisp and golden brown.

Serve topped with chopped fresh tomatoes, sliced green chilli and sour cream drizzled over. Garnish with fresh coriander leaves and freshly ground black pepper.
