Easy Asian Chicken Slaw Salad with Crunchy Noodles, Cashews and a Sesame Dressing

This is a weeknight meal I make for myself all the time. My local Woolies recently became a Woolies metro, so I've found these ingredients are usually always available. It lasts me two nights. This recipe, however, will feed four, possibly six people. All up, it costs approx. $30, give or take. Both salad bowls cost $5.50 each, the chicken $11.50, and the noodles and dressing are an extra $5. You don't need to add the cashews, but I do if I have a bag in the cupboard left over from shoots at home.

I love the textural elements of this dish; it's sticky, salty, and sweet, and I adore the crispy noodles and crunchy nuts. It also only takes 5 minutes to put together.


you will need
1 x 230g box woolworths pre-made asian-style salad bowl
1 x 240g box woolworths pre-made green goodness salad bowl
75g changs crunchy fried noodles
1/2 cup/125g roasted unsalted cashew nuts
1 free-range rotisserie chicken
changs crispy noodle salad dressing
1 tbsp black or white sesame seeds
1/2 cup/125g extra edamame beans shelled (optional)


  1. Allow the chicken to cool, then pull as much meat as possible off the carcass. I also like to use the skin, as it's one of the best parts of a pre-cooked rotisserie chicken.

  2. Combine the contents of both salad bowls in a large mixing bowl.

  3. I removed the cranberries and sunflower seeds from the green goodness salad bowl as I didn't find them to be a good flavour combo with the other ingredients. You can keep them to snack on, etc. I also do not use the pre-made sachet dressing from either bowl. Using Chang's crispy noodle salad dressing alone is enough. Again, I keep these sachets in the fridge for other salad dressings and when needed. Plus, I find the dressing in the pre-made Asian-style salad bowlquite salty.

  4. Scatter the nuts and crunchy noodles over the salad ingredients, along with the torn chicken, and drizzle the noodle salad dressing to taste. Scatter sesame seeds on top.

  5. Season to taste - although I rarely do as the dressing is seasoned enough, I find.

  6. At this stage, you can add more edamame beans if preferred.
