Easy Smash-style Burgers


MAKES 8 BURGER PATTIES

FOR THE PATTIES
1kg good quality beef mince
1 tbsp onion powder
1 tbsp squeezy garlic (or 4 plump garlic cloves, peeled + minced)
1 heaped tbsp Dijon mustard
1 tbsp hickory BBQ sauce
1 tsp anchovy paste or 2 fillets super finely chopped
1 handful fresh basil, finely chopped
1 egg
Salt and freshly ground black pepper

TO SERVE
Brioche buns
Cheese of your choice - I used bog-standard Aussie cheddar
AMERICAN-STYLE BACON
Fresh tomato, red onion, oak leaf lettuce
Gherkins
American mustard and standard ketchup
FRENCH FRIES


  1. Combine everything thoroughly in a large mixing bowl and season with a really generous amount of salt.

  2. Use clean hands or disposable Latex gloves to make the burger patties. Divide the mixture into eight even balls, place them on small sheets of baking parchment, and flatten them as much as possible. Repeat with the rest, stacking them on separate paper sheets as you go. Wrap the whole lot with cling film and chill in the fridge for 1-2 hours.

  3. When ready to cook, place on a super hot griddle pan sprayed with olive oil, pressing down a bit more to ensure nice thin patties. Cook for 3-4 minutes on each side or until cooked through.

  4. Serve hot with suggested condiments/accompaniments as listed above.
